Lovecraft Week: Cthulhu Nopales and Eggs

Cthulhu Nopales an Eggs in a bacon bowl

Deep in the city of R’lyeh, there is no ingredient more rare and sought after than the desert grown paddles of nopales. So there is no better way to honor the priest of the Old Ones with this dish. Lucky for us nopales can be found ready to use in a jar at your local grocery store. If not available this recipe can easily substitute the napoles with any other green variety of pepper. Bell peppers, sweet peppers, and even jalapeño peppers – for those of you who are more dragon then octopus or human.

Cthulhu Nopales and Eggs Bacon Bowl

4-5 strips Bacon
2 Eggs
1/4 cup Cheese, shredded
1/4 cup Nopales, julienne strips
1-2 Olives

** Ingredient listed are needed for ONE Cthulhu.

Using either Bacon Bowl® pans or a cupcake pan turned upside down, wrap bacon by using two half pieces in a cross over the peak then two full pieces wrapped around the base wall in opposite directions. Place additional bacon, flat, on the side of the pan that will be used later for the wings. (1 strip per Cthulhu)

Bake the bacon at 375°f for 30 minutes or until desired crispness by checking every 5 minutes.

In a skillet scramble 2 eggs, per desired Cthulhu, to desired taste. Remove from heat and top with cheese; allowing the eggs to stick together for better form.

Allow bacon bowls to cool briefly before removing. Turn over and fill with egg scramble

Drape strips of nopales over the top of the eggs to slightly hang over one edge as his feelers. Then additional strips of nopales in perpendicularly as the head. I used 2 strips hanging longer on the sides for arms and then circled 2 more on top for his eyes, filled with olive halves.

Finally, cut the additional bacon piece in half and apply to the back of Cthulhu for his wings. Toothpicks may be required depending on the crispness of the bacon.
