Minion Monday: Star Trek Icoberry Torte (Lemon Blueberry Brownie)

A popular dish out on Deep Space 9; The icoberry is a dark blue fruit used in many stellar desserts and drinks. But the icoberry torte was Captain Sisko’s favorite “coffee date” dish and often enjoyed it with a delicious mug of Raktajino. This lemony dish of awesome will have your taste buds doing a Kolvoord Starburst!!

Star Trek Icoberry Torte (Lemon Blueberry Brownie)

Brownies:

3/ 4 cup Flour
1/ 4 tsp Salt
8 tbsp Unsalted Butter, Softened
3/ 4 cup Sugar
1 tsp Finely Grated Zest of Lemon
2 Eggs
1 tbsp Fresh Lemon Juice
3/ 4 cup Blueberries

Lemon Glaze:

1/ 2 cup Powdered Sugar
1 tbsp Fresh Lemon Juice
1 tsp Finely Grated Zest of Lemon

Prepare round pan with butter and flour (or nonstick cooking spray)

Sift together the flour and salt in a separate bowl and set aside

Mix butter and sugar together until light and fluffy then add in lemon zest and mix thoroughly

Add in eggs one at a time, beating well after each one. And finally add in lemon juice.

Pour half the batter into pan and spread around evenly.

Add in blueberries in an even layer

// I decorated the blueberries into a Milky Way Galaxy spiral for that good ol’ home taste

Pour the remaining batter on top of blueberries and again spread evenly

Preheat oven to 350; Bake for 20-25 minutes

Prepare lemon glaze in a small bowl

Whisk together the powdered sugar, lemon juice, and lemon zest thoroughly.

// add in a teaspoon of water if glaze is too thick

Spread glaze over brownies and allow to harden before serving
