Firefly Week: Dueling Fruity Oaty Bars Part II

Lil Jenni Fruity Oat Bars

Earlier this morning I posted minion Evin Cooper’s original recipe for Fruity Oat Bars. Since this is one of the most popular recipes in the entire Browncoat ‘verse, it’s no surprise minion Lil Jenni also wanted to take a crack at it. In Lil Jenni’s case, while the photos are all hers, the recipe itself is inspired by a recipe from Sally’s Baking Addiction. Allegedly, Sally’s Baking Addiction wasn’t trying to appeal to a Whedonesque audience, but fruity oat bars AND a strawberry fetish? When no one else is home, we know what Sally really watches.

The two Dueling Fruity Oat Bars couldn’t be more different. If you want to give either one as a gift, here are some printable Fruity Oat Bar wrappers to add that deadly touch of deliciousness.

Fruity Oat Bar Wrapper

Fruity Oat Bars

Filling
2 tbsp cornstarch
2 tbsp warm water
2 cups finely diced strawberries
1/4 cup maple syrup
1 tbsp granulated sugar

Oatmeal Base / Topping
2 1/4 cup quick oats (not whole rolled)
1 tsp ground cinnamon
1 cup peanut butter
1/4 cup maple syrup
1/4 cup apple butter
1 large egg, beaten
1/2 cup sliced almonds

In a small bowl, mix cornstarch and warm water until fully dissolved and set aside.

In a pot, combine strawberries, maple syrup, and sugar. Heat over medium heat, stirring regularly. Bringing to a boil and then remove from heat. Add in the cornstarch mixture and whisk until well mixed. Set aside to thicken and cool.

In a large bowl, thoroughly mix together the oats, cinnamon, both butters, maple syrup, and the beaten egg. Oats should be well moistened.

Set aside 1/ 2 cup of oats mixture for the top. Poor remaining oats into an 8×8 baking pan lined with aluminum foil. Press down on oats to cover the bottom of the pan evenly (I used a cup to roll over the oats).

Cover oats with the strawberry filling, evenly.

Mix the remaining 1/ 2 cup oats with the sliced almonds. Crumble mixture on top of the strawberry filling and then pat down firmly

Preheat oven to 325; Bake for 20-25 minutes

Allow to cool completely before cutting into squares.
