Princess Bride – Cliffs of Insanity Oatmeal Scones

Straight from the Guilder frontier I bring you this scone recipe that is so delish that not liking it is inconceivable! But what good is that? The trust of a woman? Well if you don’t like it I might end up unemployed…. in Greenland! Oh. Right I don’t get paid for being awesome.
This recipe is really versatile in that you can change out the brown sugar for white, sub the butter for apple sauce, or add an orange glaze to the top. This recipe almost whispers “as you wish.” Remember, the scone can only be as good as the baker, but we all know Kitchen Overlord readers are the best. No matter what happens in your kitchen, I promise it won’t kill you until you reach the top.
Ingredients:
1 1/2 cup Flour
2 cups Scottish oats //any rolled oats will work
1/4 cup Brown Sugar
4 tsp Baking Powder
1/2 cup Dried Cranberries //currants, blueberries, or any type of dried fruit works
1 Egg
1/2 cup Butter, Melted
1/3 cup Milk
1/4 tsp Cinnamon
1/4 cup Agave Honey
Milk and Sugar
In mixing bowl; combine flour, oats, sugar, baking powder, milk, and cinnamon thoroughly.
In a small bowl beat the egg until frothy and mix with melted butter and milk.
Make a well in the center of the dry ingredients and pour in the egg mixture. Mix thoroughly slowly adding the honey until you have a soft dough.
Hand knead the dough slightly to form two halves. Place dough halves onto a greased baking sheet and pat down the dough into 1/2 inch thick circles.
Slice each disc into 8 even portions. Then use a basting brush to add a thin coat of milk to the outside of each disc and then lightly sprinkle with sugar.
Draw a super teeny tiny drawing of Fezzik carrying an even tinier Inigo, Princess Butter Cup, and Vizzini. Tie the drawing, very carefully to a rope and toss down from the top of the cliffs. //eating of said drawing and rope highly not recommended.
Bake at 425° for 15 minutes or until slightly browned //As Inigio Montoya would say “I hate waiting”
