Vampire Bites: Cashew Blood Clots

Watch out, Fangtasia. These blood clots are as sweet and spicy as a southern bell waitress and as addictive as Erik’s pet, Sookie.

Vampire Bites: Spicy Southern Blood Clots

4 cups roasted cashews
1 cup light corn syrup
2 tbsp chili powder
1 ½ tbsp kosher salt
1 tbsp garlic powder
½ tbsp ginger powder
1 tsp red food coloring (optional, but it helps)

These are so easy Terry could whip up a batch while Lafayette was out back taking a smoke break.

Heat your oven to a mere 300F.

Now spread a baking sheet with aluminum foil and butter the surface. However much butter you think is enough, double it.

Mix your chili powder, kosher salt, garlic powder, and ginger powder into a fragrant, spicy mess.

Now dump in your corn syrup and food coloring. Mix it all up until it’s the color of stage blood.

Add the nuts and gently but thoroughly keep mixing until they’re completely coated. You want all the nooks and crannies. Now, technically you could use the same technique on a cheaper bag of mixed nuts, but only the cashews offer that clot-like look, half reminiscent of ripped guts.

Once your cashews are thoroughly coated, spread them on the well buttered baking sheet.

You want a single layer, with the nuts touching as little as possible.

Bake at 300F for 10-12 minutes. If they start to smell a little toasty, it’s time to turn them. Use a wide spatula and flip those suckers in big batches, taking care to make sure they’re still in a single layer before you put them back in the oven. Keep baking for another 12-14 minutes, or until the nuts are no longer sticky to the touch and start to smell nicely toasted.

You’ll want to shove them right into your face, but unless you have a vampire on hand to spread a little healing blood over your wounds, you’re best off letting them cool for at least 10 minutes so you don’t burn the roof of your mouth.
