While Cap spent decades on ice, American breakfasts changed. This 4th of July, introduce him to a new take on eggs and toast for a new millennium with this blatantly patriotic Huevos Rancheros.
Avengers, Assemble:
One tortilla
One egg
Four drops of blue food coloring
1 tsp water
2 tbsp refried beans
4 tbsp salsa
1 slice mozzarella sandwich cheese
2-3 tbsp shredded mozzarella cheese
Pour your water and food coloring into a shallow bowl. Gently crack the egg inside and swirl it around until the white turns blue.
Add a little butter to a skillet. Put a circular mold/cookie cutter in the middle and pour in your newly blue egg.
Use the tip of a finger to keep the yolk centered until the egg sets.
While the egg cooks, forge the base of your shield in the heat of a skillet by toasting your tortilla.
Top it with a hearty layer of refried beans.
Smother the whole mess with delicious salsa.
Once your egg is fully cooked, carefully position it in the middle of the shield.
Use a star shaped cookie cutter on a slice of mozzarella cheese. Carefully place the star over the egg yolk.
Circle the blue egg with a ring of shredded mozzarella.
