Game of Thrones Week: Martell Orange Mousse Cake
In our fast paced world, waiting can be an exquisite form of torture. To help you fill the void between now and Season Four of Game of Thrones, minion Sarah Wright created a cool, sweet, Dornish recipe that will keep you occupied for a couple of days.
Martell Orange Mousse Cake

A delicious light, cool cake with the crest of house Martell on it. Perfect for those hot Dornish summers. This dessert should be made the night before so it has time to set properly.
2/3 cup sugar
1 tbsp orange zest (you can use the rind of the blood orange in the mouse)
1 tsp vanilla
2/3 cup flour
a heaping 1/4 tsp of baking powder
3 tbsp melted butter
1. Whisk the eggs and the sugar until they are light, frothy and uniform in color and texture. This is the most important part. The more you whisk the fluffier your cake will be in the end.
2. Add the zest and vanilla. Continue mixing
3. Slowly sift in the flour and baking powder in stirring slowly.
4. Once the batter is smooth again add the melted butter. Continue stirring (this recipe was designed to build up those arm muscles)
5. Pour the batter into a lined spring-form pan (YouTube has instructions for this)
6. Bake at 325 for 30-45 minutes. the cake should be golden and spring back when touched and a skewer should come out clean.
7. Let cool before putting the mousse on. This can be made a day or two in advance.
For the Mousse:
2 cups whipped cream
2 1/4 cups orange juice
2 pkgs (5 tsps) unflavored gelatin
1 blood orange
1. Put 1/4 cup of the orange juice and the gelatin in the microwave. Microwave ten seconds then stir repeating till the gelatin is fully dissolved.
2. Add the rest of the orange juice. Stir and then set aside in the fridge.
3. Whip the cream until very, very stiff. You don’t want butter but the cream should be almost that thick.
4. Slowly stir 1 3/4 of the now cooled orange juice into the cream. (If your orange juice is still hot leave it in the fridge longer if it’s gone solid microwave it for ten seconds at a time till it’s liquid again.) Ideally it should look a bit like raw egg yolks.
5. Pour the orange cream on top of the cooled cake in the spring form. Let set for about half an hour.
6. Peel and slice an blood orange and arrange it on top of the now solid mousse in the shape of the Martell sun.
7. Scoop the rest of the gelatinous orange juice onto the cake. Don’t worry if it’s a little lumpy just stick it under the broiler for ten seconds and it will sort it’s self out.
8. Let the whole thing chill for several hours. Preferable overnight.
9. Serve chilled and amaze your guests with your kitchen prowess and knowledge of Game of Thrones.
