Gingerbread Sleipnir

Make your sacrifice to Odin with these gingerbread cookies while you celebrate Yule this year. Soft chewy gingerbread cookies and mead (or milk) are also the perfect snack for Odin when you leave carrots, straw, and sugar in your boots by the chimney for Sleipnir.

3 cups Flour
3/ 4 tsp Baking Soda
1 1 /2 tsp Baking Powder
1 /4 tsp Salt
1 3/ 4 tsp Ground Cinnamon
1 tbs Ground Ginger
1 /4 tsp Ground Cloves
1 Egg
6 tbsp Unsalted Butter
3/ 4 cups Dark Brown Sugar
2 tsp Vanilla
1/ 2 cup Molasses

In a medium bowl whisk together the flour, baking soda, baking powder, salt, cinnamon, ginger, and cloves and set aside.

In a mixing bowl beat together the egg, butter, and brown sugar until well blended. Add vanilla and molasses to the wet mixture.
When thoroughly mixed, wrap dough in plastic wrap and let stand for at least an hour.

Place dough on a lightly floured surface and roll dough to a scant 1/4-inch thick.

Using a pre-selected design carefully cut your designs out and place on cookie sheet.

Bake at 375° for 8-10 minutes

Highlight design with icing and enjoy!
