Kitchen Overlord Mango Sticky Rice

So you’re in a bunker with a few minutes to kill before pressing a button. Dharma conveniently left you with a bag labeled “rice,” a can labeled “coconut milk,” and a box of “sugar.” All you need are a couple mangos from your tropical island and you suddenly have a pretty easy dessert that you can make in 108 minutes. No pressure. Failing to make this dessert probably won’t result in a catastrophe.

Make that 107 minutes. Get started already.

The Others Mango Sticky Rice
(from LOST)

1/3/4 cup water
1 cup uncooked sticky rice
1 can full fat Coconut Milk
2/3 cup sugar
1 tsp salt
2 ripe mangoes

Soak sticky rice in water overnight. Drain.

Boil 1 3/4 cups water. Add rice and stir well.

Reduce heat to low and cover. Simmer for 15 minutes.

Shake unopened coconut milk like you’re threatening a hapless prisoner.

Combine coconut milk, sugar, and salt in a small saucepan.

Use a medium heat to gently bring it to a boil.

Cover, turn off the heat, and set aside.

After the rice cooks for 15 minutes, add 1 cup of the coconut milk mix.

Continue cooking for 5 minutes. Cover, remove from heat.

Let rice mix cool undisturbed for 108 minutes.

Peel and slice mangoes.

Fill a ramekin with 1/2 cup of sticky rice and top it with 1/2 sliced mango. Drizzle with remaining coconut milk sauce.

Serve with Dharma fish biscuits or whatever you’ve been able to forage on the island.
