Tony Stark’s Power Breakfast

4 large tomatoes
4 eggs
4 tsp olive oil
8 fresh basil leaves (or 4 tsp Italian seasoning)
8 tbsp mozzarella cheese
Kosher salt and fresh ground pepper
8 tbsp fresh salsa

Core the tomatoes like you’re ripping the core from an arc reactor. Cut away just enough so an egg fits snugly inside.

Spread 1 tbsp olive oil around the inside of each hollowed tomato. Now sprinkle the inside with kosher salt and fresh ground pepper.

If you’re the kind of person who has fresh herbs in your fridge, arrange two fresh basil leaves so they form an X at the bottom of each tomato. Otherwise, sprinkle in 1 tsp Italian seasoning.

Once your tomatoes are nicely seasoned, crack a single egg into each one.

I’ll be honest with you. The hard part is keeping the yolk perfectly centered. When poaching or frying eggs, it’s pretty easy to do. You just use your fingertip to hold it in place for the first few seconds of cooking. You really can’t do that with an open oven, though. If your egg is horribly off center, try arranging a little cheese inside to push it into place. Don’t stress too much about it, though.

Bake your tomatoes at 400F for 15 minutes.

As soon as you take your tomatoes out of the oven, quickly and carefully sprinkle the cheese around the perimeter of the egg. Make sure to leave the yolk bright and yellow at the center. If your yolk is a little off center, this is your chance to strategically position the cheese to make the yolk look a little more on target.

Put your eggs back in the oven for another 5 minutes, or until the cheese is melted. When you take them out, you can use the dull edge of a butter knife to push any cheese spillover into place so you’ll still have a neat, round circle of mozzarella.

Spread 2 tbsp of fresh salsa on a plate. Proudly arrange your baked tomato in the middle. If you’re hung over, it looks like Iron Man’s arc reactor glowing from the middle of his armor.

Serve one to each supermodel who spent the night, along with a Bloody Mary and a nondisclosure agreement.
