Help keep the koopa troopa blues away with this dessert dish! These minty delicious cookies are excellent when filled with a vanilla or chocolate ice cream and topped with one of the amazing Mario cookie cutters from Warpzone Prints.
These Mario cookies were baked using the cookie recipe provided with the cookie cutter. It’s a good one for any detailed cookie cutters. Just look how these turned out! Get the recipe at this link. I then decorated the cookies with red, blue, and black gel colors. The details were colored in using brown and green coloring edible food coloring markers, which you can find at most craft stores. The recipe below is for the green bottom cookies, which are durable enough to support a scoop of ice cream and a sugar cookie without going all soggy.
Super Mario – Mint Cookie Warp Pipes

2 1/ 2 cups Flour
1 tsp Baking Soda
1/ 2 tsp Salt
1 cup Butter, softened
1 1/ 4 cups Sugar
2 Eggs
1 tsp Green Food Coloring
1 tsp Peppermint or Mint Extract
In a large bowl mix together flour, salt, and baking soda.
In another bowl, cream sugar and butter together until light and fluffy.
Add in the egg and stir until fully incorporated.
Add in food coloring and extract and mix thoroughly.
Gradually stir in the flour mixture into the batter.
// This recipe works really well with white chocolate chips mixed in as a last step but best if used in drop cookie format. Adding chips weakens the cookie structurally when trying to mold it.
Using approximately 2-3 tablespoons of batter, roll into a ball and flatten with the palm of your hand into a circle about 3 inches in diameter. Keeping the last 1/ 2 inch thinner than the center.
Turn a cupcake pan upside down. Grease and flour the back.
Wrap the formed dough around an inverted cup, allowing for just a slight lip over.
Preheat oven to 350; Bake for 10-12 minutes
Cool pipes completely before removing.
Fill pipes with ice cream, whipped cream, or the tasty dessert filling of your choice.
Top with Mario as he jumps from pipe to pipe.
