Vampire Week: Santa Carla’s County Fair Winning Roasted Garlic Chocolate Chip Cookies

Nothing like a good old fashion blue ribbon winning cookie recipe to help cheer you up after a long day of vampire hunting. And Santa Carla’s county fair has one of the most amazing recipes I’ve ever tried. Originally submitted by Grandma Frog, these cookies have an amazing new kick to an old recipe. We’ve been aware of some very serious vampire activity in town for a long time so Grandma Frog with some “inspiration from (her) grandsons, Edgar and Allen”, she’s added roasted garlic to her old fashion chocolate chip recipe. While it might not seem appealing at first the smoky savory flavor of the garlic balances out the sweet delicate taste of chocolate so well it will make your taste buds feel like they are dancing outside the second floor window! But the one thing about living in Santa Carla I never could stomach….all the damn vampires!!

Santa Carla’s County Fair Winning Roasted Garlic Chocolate Chip Cookies

Ingredients

1 bulb of garlic
1/4 cup coconut oil
12 tbsp unsalted butter, softened
1 cup sugar
1/2 cup dark brown sugar
2 eggs
2 tsp vanilla
2 1/2 cups flour
1 1/4 tsp baking powder
3/4 tsp salt
1 1/2 cups chocolate chips

Prepare garlic by remove garlic cloves from outer husk Place the garlic in a small, oven-proof dish and add the oil. Cover the dish with foil.

Bake at 325 for 30 minutes, allow to fully cool before using in batter

In mixing bowl combine butter, roasted garlic with oil, and blend well.

Add the sugars and thoroughly blend. Mix in the eggs and vanilla and again mix well.

Beat in eggs and add vanilla, and blend well until smooth and creamy.

In a separate bowl combine the flour and baking powder

Add the dry ingredients to the mixing bowl and blend. Lastly mix in the chocolate chips.

Drop the dough by the rounded tablespoonful about 2 inches apart onto un-greased baking sheets.

Bake at 350 for 10-12 minutes.
