A year into the Zombie Apocalypse, all the canned goods will be long since eaten. You’ll have to take matters into your own hands – literally. This week, our illustrated recipe shows you how our favorite band of zombie apocalypse survivors could realistically prepare a tasty marinade for all those squirrels Daryl keeps shooting. It also happens to be incredibly tasty on Italian bread, not to mention a surprisingly good pasta sauce. Just make sure you keep an eye out for walkers while you’re plucking flowers.
Dandelion Green and Walnut Pesto
2 cups young dandelion greens
1/4 cup peanut oil
1/2 cup walnuts
2 cloves peeled garlic
1 lemon, zested and juiced
1 tsp kosher salt
1/2 tsp black pepper
Pick dandelion greens from young flowers with yellow tops
Climb neighbor’s tree to gather fresh walnuts
Crush peanuts in an old mason jar. Leave alone till oil floats to the top
Pull overgrown garlic from a zombie granny’s garden
“Acquire” a lemon from other survivors [for the illustration, maybe at gunpoint?]
Find a building with working electricity. Put everything into a blender. Station men with crossbows at every window just in case the noise attracts zombies.
Enjoy on bread, as a pasta sauce, or as a squirrel marinade.
