CW The Flash Cranberry, Pear and Crystallized Ginger Pie

(vegan)

  • 2 cups whole, fresh cranberries
  • 1 cup sweet white wine (or water)
  • 1 1/4 cups sugar
  • ¼ tsp salt
  • Juice and zest of 1 lemon
  • 1 tbsp vegetable oil
  • ½ tsp cinnamon
  • ¼ tsp cardamom
  • 2 tbsp corn starch
  • 2 tbsp water
  • 2 tbsp chopped crystallized ginger
  • 6 canned pear halves or 3 poached pears
  • 1 vegan pie crust
  • Flash symbol cut from large strips of crystallized ginger

Start by breaking into Star Labs and stealing some crystals. Well, “break in” might be an exaggeration. Just wander up. Harrison Wells didn’t believe in locking up his particle accelerator or millions of dollars in tech, and neither does Barry. I eagerly anticipate the episode where they discover a bunch of poor college students have been secretly living in a wing of abandoned offices since the accelerator explosion.

You’re going to want several large slices of crystallized ginger. I find it’s easiest to carve out the Flash logo first, then chop up all the scraps and use them in the pie filling.

To make Barry’s signature Lightning Bolt, start by cutting three rhombus shaped pieces of ginger so they form a Z shape. Add a long, pointy spike to the upper left and lower right sides of the Z. Presto! You’ve got a lightning bolt. The elementary school teacher who loved making you do Tangrams would be so proud!

Set your Flash logo aside and chop up the ginger scraps. Now that you’ve done the hard work, making the filling is a breeze.

Pour the cranberries, wine, sugar, salt, lemon juice and zest, vegetable oil, cardamom, and cinnamon into a medium saucepan. Bring it to a low boil, stirring occasionally, and let it bubble away for about 15 minutes, or until everything is nice and fragrant and the cranberries have mostly burst.

Mix the cornstarch with water until it’s free of lumps then pour it into the pan and keep stirring until the slurry is well incorporated.

Meanwhile, blind bake the crust for 10 minutes. This helps keep it from developing a dreaded soggy bottom.

Slice the poached or canned pears about ½ inch thick and spread them across the bottom of the blind baked crust. You want a nice, even layer of pear slices.

Now you just sprinkle your minced crystallized ginger over the pears then pour your cranberry mix over the pears and ginger.

Bake at 400F for 18-22 minutes, or until the crust is golden brown and the filling is no longer wobbly.

Resist the urge to dive in immediately. This pie is best served as cold as Killer Frost.

If you leave the ginger Flash logo on the middle overnight the cranberry filling will soak into it, making it look like your logo is bleeding. There are some meta-humans who are into that, but if you want a shiny, optimistic logo, arrange the ginger slices in the middle of the pie right before presentation.
