These summery blueberry stuffed sweet rolls add some unhealthy carby goodness to all those light and fruity picnic inspired cold salads. Plus, they make great substitutes for ocean tiles.
Ocean Blue Stuffed Sweet Rolls
Dough:
4 – 4 ½ cups bread flour
1 tbsp yeast
1 ½ cups milk
½ cup sugar
2 eggs
2 tbsp softened butter
1 tsp salt
Filling:
2 cups frozen blueberries
½ cup brown sugar
½ cup melted butter
Glaze:
2 cups powdered sugar
juice of 1 lemon
2 tbsp water
½ tsp blue food coloring
Start by heating the milk until it’s the temperature of a warm bath. Mix in the yeast. Let that bloom for 10 minutes. Add the sugar, salt, eggs and softened butter. Mix it all into a single frothy mess. Now mix in the flour. If you have a stand mixer, attach the dough hook and let it do the hard labor for the next 6-7 minutes. If you’re kneading by hand, show that dough who’s boss for the next 8-10 minutes.
Once you have achieved a well kneaded dough, cover it with a clean kitchen towel and let it rise for an hour. When you come back, dust a clean surface with flour, punch down your dough, and roll it into a large rectangle.
Spread the melted butter filling over your dough rectangle. Top that with the brown sugar. Finally, add an even layer of blueberries. Carefully roll the dough along the long side until you now have a long tube of sweet temptation. Cut it into 1 inch slices and arrange them 3 inches apart on a greased cookie sheet. Don’t put them any closer. You want big round cinnamon rolls, not scrunched in square ones.
Let the rolls rise for another hour. Bake them at 350F for 20-25 minutes, or until the tops are a dark golden brown.
While the rolls bake, make your super easy topping by dumping all the glaze ingredients into a bowl and attacking them with a whisk. If you want it thicker, add more sugar. To make it thinner, add a little more lemon juice. Let the rolls cool before painting them with bright blue glaze.
